This unique black tea was hand-produced—from frozen leaves—by Takatomo Katagi, head of the Katagi Koukaen tea garden in Japan.
This tea is available only at Taka's garden in Japan—or here at TeaHaus! This 50-gram package of tea includes a Japanese washi tea tin so that you can keep this premium tea tightly sealed to maintain its freshness—and shipping is included!*
After allowing tea plants to freeze, Taka harvested the frozen leaves, put them into a shallow bamboo basket, and manipulated them with his hands for about 30 minutes. Oxidizing the leaves by hand like this is time consuming and must be done in very small batches to ensure even oxidation. Consequently, only an extremely limited amount of this tea exists! As our translator wrote to us, "Since he used his own hands to make this tea, he could not make a lot of them." Further, the taste and characteristics of this year's Frozen Black Tea will never be precisely duplicated.
Preparation: 3 g tea leaves (1 heaping teaspoon) per 8 oz cup of filtered water, boiled and cooled to 90°C/194°F. Allow to brew 3 min.
