China Yellow Dragon

#541  The gently baked leaves of this exquisite tea yield a brew reminiscent of a Darjeeling, with a strong earthiness followed by a malty finish; very complex.

Preparation: 3 g tea leaves (1 heaping teaspoon) per 8 oz cup of filtered water, boiled and cooled to 90°C/194°F. Allow to brew 2 min.


Yellow teas from southern China are a rare variety of green tea whose production techniques are often closely held. During processing, the leaves undergo a "smothering" stage, which allows the damp, softened leaves to re-absorb their own aromatics. This results in a yellow-pigmented leaf.
